December 9, 2009 - The European Union established a ruling to protect Naples' Neapolitan pizzas. The EU's ruling said Napolitan pizza was now part of Europe's food heritage, and that all pizzerias aspiring to supply and make the real Neapolitan pizzas must comply with strict traditional standards regarding ingredients.
Why CHIPP?

San Marzano tomatoes: Plum tomatoes grown in the volcanic soil of San Marzano, Italy. Their low sugar content and thick, juicy flesh makes them ideal for use in pizza sauces. The legend is that the first seeds to become San Marzano tomatoes came to Campania in 1770, as a gift from the Kingdom of Peru to the Kingdom of Naples (the tomato originated in Peru). The seeds were planted in the area that is the present-day commune of San Marzano, a small town southeast of Naples at the base of Mount Vesuvius. The volcanic soil is believed to act as a filter for water impurities, producing a lower-acidity, brighter-flavored tomato. The tomatoes grown in the San Marzano area have the D.O.P. emblem, Denominazione dOrigine Protetta.
CHIPP Pizza only uses these types of tomatoes, to preserve authenticity of true Neapolitan pizza.

>Prepared in wood-fired oven (domed oven) at 800F for approximately 90 seconds.
> Pizza base is hand-kneaded.
>Our pizza does not exceed 35 centimeters in diameter and is not more than one-third of a centimeter thick at the centre

Mozzarella di Bufala: This wonderfully delicate, white, stringy rich cheese is produced by the milk of water buffalos. Pizza maker Raphael Esposito concocted the margherita pizza topped with tomato slices, buffalo mozzarella and fresh basil after the colors of the Italian flag in honor of Queen Margherita's visit to Naples in 1889. The rich and creamy flavor of this cheese make it perfect topic for Napolitan pizza.

Originally created in 1984 in Naples with the help of the local chamber of commerce and the regional Italian government, this association certifies pizzerias that produce pizza adhering to a strict set of guidelines, based on Neapolitan tradition. CHIPP's chefs had been trained and certified by VPN. There are only three kinds of pizza recognized in the DOC guidelines, and they have very few pizza toppings. They are:
Pizza Marinara (San Marzano tomatoes, garlic, oregano, and olive oil)
Pizza Margherita (San Marzano tomatoes, garlic, oregano, olive oil, mozzarella, and basil)
Pizza Magherita Extra or DOC (San Marzano tomatoes, garlic, oregano, olive oil, Mozzarella bi Buffala, and basil)
